The sushi restaurant is led by executive Head Sushi Chef Shigeru Fujita, who has been trained in the traditional sushi school in Japan for six years and was previously the Sushi Head Chef at the legendary Nobu Matsuhisa for five years before joining the Steffen Henssler restaurant. ISHI positions itself in the premium segment and is the latest concept of the Henssler universe and paving the way for expansion in the fine dining sushi world. You will find Peruvian as well as French accents in our sushi restaurant, which our sushi masters combine exquisitely with traditional Japanese cuisine. Therefore the menu includes a range of traditionally prepared sushi classics, as well as exquisite dishes such as A5 hot stone wagyu, bluefin tuna, scallops with foie gras and vanilla miso, monkfish with crustacean bouillabaisse and ceviche with umami tomatoes and caviar.
